Road Trip Recipe: Leslie's Cool, Simple, Refreshing Watermelon Ice
Saturday, July 28, 2012 at 12:23AM
Mrs. G.
Watermelon Ice
1 medium sized watermelon
1 lime- juiced
1 container raspberries
1 cup pomegranate juice
1 cup sugar (I had not put any sugar in the stuff I served you) Mrs. G's note: it was plenty sweet enough.
Combine all ingredients in a large bowl. Mix. Place in blender and blend until smooth. Put in freezer-safe container. Let it freeze. After a couple of hours check it and start turning it over to allow the juices to spread evenly throughout. You don't want all the juices to settle at the bottom. After it's frozen, or even when it's close to frozen I sometimes take it and put it in serving sized containers. That way you can just take out a serving and either dig in with your spoon or put it in the refrigerator for a little while to allow it to become slushy.
Enjoy. It's a tasty and light summer treat.

YUM! I'll have the no-sugar version, please! A bit of tart with the sweet is perfect for a hot day.
This sounds so good- Maybe I can do this with melon?
You could do a cookbook of travels, or , a travel cookbook.
That sounds so refreshing, and I just bought a watermelon. Perfect!
What exactly do you do with the watermelon? Cut it into chunks? Mash it? Leave it whole?
SC, you cut it in chunks and blend it with the other ingredients. Buy a seedless one.
